So here’s the 411 (shout out to all of you 30-somethings who still use that slang like I do)…

Just recently, my husband was encouraged by his chiropractor to go on the Paleo diet, which only includes things like meat and veggies. They call it the “Caveman Diet”. So all the delicious, but unhealthy foods had to go. This was a huge step to take, but with the issues that he dealt with, he was willing to try anything to get relief. Though I haven’t jumped completely on board, I do what I can to support him.

So this past week, he found he was craving some hearty stew and found a full, but fairly simple recipe to satisfy it.

The ingredients include:

  • Cubed Boneless Beef Chuck
  • Rutabaga
  • Carrots
  • Sweet Potatoes
  • Garlic Cloves
  • Tomato Paste
  • Thyme
  • Beef Stock


After the grocery store run, he quickly got to work cubing the meat and chopping up the veggies. It’s always nice seeing a man in the kitchen making dinner, am I right, ladies? 😉

He used our rather large skillet, which was perfect considering this made a nice 6 servings! Once the stew was ready to be eaten, he and I came to the conclusion that maybe adding fresh green beans to this stew would have added a little more flavor and color. Besides that, this recipe is amazing. And I’ve never tried rutabaga before. I was surprised how similar it is to a potato with how you slice it, the way it looks after cubed, and the texture. You can mash, saute, or cut them into fries for a healthier alternative.

Paleo Stew

Ingredients

  • 2 lbs cubed beef chuck
  • 5 sliced carrots
  • 1 diced rutabaga
  • 2 cubed sweet potatoes
  • 2 garlic cloves
  • 1/2 can tomato paste
  • 1 tsp thyme
  • 1 tsp rosemary
  • 1 box beef stock
  • salt and pepper to taste

Instructions

  1. Cook beef til brown
  2. Stir in beef stock and tomato paste
  3. Add in sliced veggies and bring pot to boil
  4. Adjust to simmer and add in salt and pepper
  5. Allow to cook for 45 minutes, stirring occasionally
  6. Serve and enjoy!
